Delicious chicken thighs recipe
The ingredients & recipe:
Chicken thighs that u clean well: put salt & lemon juice, ginger in water in a bassin leave for 30 min, rinse well under sink. Make 2 or 3cuts on each side of the thighs.
The chicken marinade:
Mince 5 cloves of garlic with 1tsp of salt
3 tbp of parsley & cilintro chopped very fine
1/2tsp black pepper
1tbp ginger ground
1tsp turmeric ground
Saffron threads
Salt (be careful u already added salt to the garlic)
Pulpe of 1 small preserved lemon with juice (the video how to make Moroccan preserved lemon is on my channel). Add some water. Mix the spices & marinade the chickens well in the cuts so that it absorbs all the flavors. U can leave it overnight or at least 1 hour.
In a pan, put the chicken, add 3 large chopped onions, 1tbp chopped parsley & cilintro, 50ml olive oil. Cover with enough boiling water that cooks the chicken but not too much. Add 1tbp of Moroccan smen or fermented butter, which is the secret of Moroccan dishes. Watch u r chicken because they cook quickly. Once tender, remove the chicken to a sheet going to the oven. Melt 1tbp butter, add 1tsp harissa or hot sauce, 1tbp paprika, mix & brush the thighs with this mixture and transfer to a hot oven until golden brown.
For the sauce, add green olives & press the onions and cook on a medium heat for 10 min. Strain & press with a spoon as on the video.
I served it with rice and a green salad. For the rice, I took 4 ladles of the broth, added 1 cup of boiling water, salt & pepper and cooked the rice as instructed on the package. U can decorate with preserved lemon.
