The Aussie mum has just released her new cookbook Easy Dinner Queen, and luckily for us, we got a sneak peek!
Below is one of de Sousa’s recipes from the book, Goan to Lamb Chop Heaven, a simple slow cooker dish packed with flavour.
According to de Sousa, “it’s the kind of dish that’ll make you look like a pro without even breaking a sweat”.

6 lamb loin chops
1 tbsp crushed garlic
1 tbsp crushed ginger
2 tsp chilli powder
1 tbsp ground cumin
1 tsp ground cloves
2 tsp salt
2 tsp pepper
¼ cup balsamic vinegar
4 red onions, sliced
Let’s start out by giving those lamb chops some serious flavour! First up, place the lamb chops in a shallow rectangular baking dish. Then in a bowl, mix together the garlic, ginger, chilli powder, cumin, cloves, salt, pepper and balsamic vinegar. It’s a spice party, and you’re lamb’s invited!Pour the spicy, tangy marinade over the lamb chops and give them a good massage. Make sure every bit of those lamb chops are coated in deliciousness – get your hands in there and make it count!Now, let’s build the base. Place the sliced red onions in the bottom of your 5.5L (22-cup) slow cooker and pour over ¼ cup water. The onions are going to cook down and get all soft and sweet soaking up all those lamb juices. Lay your marinated lamb chops right on top of the onions. They’re going to sit there and slowly cook to tender perfection, soaking in all that amazing flavour. Pop the lid on your slow cooker and set it to LOW for four hours or HIGH for two hours. During this time, your kitchen is going to smell like absolute heaven – just try to resist peeking! When the time’s up, your lamb will be tender and juicy, ready to serve.
