Thinking about including this in my dating profiles. 500 g green All Trump’s, 50 g sifted rye flour, 65% hydration (1/3 beer, 2/3 water), 2 tsp sugar, 2 tsp yeast, 5 tsp salt. 7/11 crushed tomatoes with oregano, sugar, salt, msg, olive oil. Supremo Italiano low moisture part skim mozzarella.

    550F convection, 3/4” aluminum, 1hr preheat. Only 5 minute bake, undercarriage could have been a little darker for my taste, but it was still really good.

    Do you notice a difference with the rye? I’m just about to try it in my preferment. Trying desperately to get something like that NY style scent just wafting through the air. It’s confounding me. 

    Honestly doesn’t look like a 550 grams of flour pie. That seems like a lot
