The salad cups are just bacon, eggs (hard boiled for 8 mins then into an ice bath) avocado, fresh dill, lime juice, pickles, chilli flakes and snp. Sooooo good. You can also swap the bacon for tuna!

I’m a big fan of zoodle (or spaghetti squash) stir fry. Brown/cook some meat cubes in oil that’s sauteed onion & garlic, toss in sliced and diced veggies, stir fry with flavoring until tender then add in the squash for about a minute and serve.
There’s more prep work than cooking, so I keep sliced and diced veggies for this and soups.
Spaghetti squash, broccoli chicken and cheese, broiled in the oven.
Made a delicious shakshouka-inspired dish the other day and ate with some vinegary, North African inspired greens. Love a good chicken curry. Fathead pizza is always a go to. I love a stir fry with pork and green beans. My new favorite is using tofu skin to make pasta with just about any sauce.

I’ve been on a stir fry kick lately: I’ll slice chicken breast, fry it in wok. Remove from pan. Add to wok: some sliced red onion and cabbage. When it’s nice and seared, I add chicken back in and sprinkle with soy sauce. It’s delicious!!
