Köfte (Turkish Meatballs)
Ingredients:
• 500g minced beef with some fat
• 2 tablespoons semolina
• 1 onion (grated and water squeezed out)
• 2 cloves garlic (crushed)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1 tsp pul biber (or chili flakes)
• ½ tsp cumin
• ¼ tsp bicarbonate of soda
Instructions:
1. In a mixing bowl, combine the minced beef, semolina, grated onion (make sure it’s drained), and crushed garlic.
2. Add salt, black pepper, paprika, pul biber, cumin, and bicarbonate of soda.
3. Knead the mixture thoroughly for about 5–10 minutes until well combined and slightly sticky.
4. Cover and let it rest in the fridge for at least 30 minutes (or overnight).
5. Shape into oval patties or small balls.
6. Grill, pan-fry, or cook on a griddle until browned and cooked through.

Plain Basmati Rice
Ingredients:
• 1 cup basmati rice
• 1½ cups water
• 1 tbsp butter or oil
• ½ tsp salt
Instructions:
1. Rinse the rice under cold water until the water runs clear.
2. In a saucepan, add the rice, water, butter or oil, and salt.
3. Bring to a boil over medium heat.
4. Once it starts boiling, reduce heat to low, cover with a tight lid, and simmer for 10–12 minutes until the water is absorbed.
5. Turn off heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.

Cacık (Turkish Yogurt & Cucumber Dip)
Ingredients:
• 1 cup plain yogurt
• 1 small cucumber (grated or finely chopped)
• 1 small clove garlic (crushed)
• Salt to taste
• Dried mint (optional)
• Water (optional – to thin it down)
Instructions:
1. In a bowl, mix yogurt with grated cucumber and crushed garlic.
2. Add salt and a sprinkle of dried mint if using.
3. For a thinner consistency, add a little cold water and mix.
4. Chill in the fridge before serving.

Turkish Shepherd’s Salad (Çoban Salatası)
Ingredients:
• 2 tomatoes (diced)
• 1 cucumber (diced)
• 1 small red or white onion (thinly sliced)
• 1 tbsp pomegranate molasses (or to taste)
• 2 tbsp olive oil
• Juice of ½ lemon
• ½ tsp sumac
• Salt to taste
Instructions:
1. Combine chopped tomatoes, cucumber, and onion in a bowl.
2. In a small bowl, mix pomegranate molasses, olive oil, lemon juice, sumac, and salt.
3. Pour dressing over the salad and toss well. Let it sit for 5–10 minutes before serving.
