3 small carrots 2 medium potatoes 1 large onion 3-4 garlic cloves 1.5 cups red lentils 1 chicken bouillon cube 1 tsp turmeric 1/2 tbs ground cumin 1/2 tsp black pepper 2 tsp salt (more to taste) 8 cups water 2 bay leaves 1/2 stick of butter Optional: 1 tbs tomato paste
Sauté the onion, garlic, potatoes and carrots in butter until they begin to brown and soften. Add the tomato paste if using, cook it for a minute and then add the lentils as well as all the spices and bay leaves and give it another stir. Add the water and let everything cook together until the potatoes and carrots soften (approx 40 mins). Then remove the bay leaves and blend the soup with an immersion blender. If it is too thick, add more water and blend again.
Topping: 1/2 stick of butter 1/2 tbs dried mint 1 tsp Aleppo pepper 1 tbs red pepper paste (optional)
Cook in a pan for 2 minutes until fragrant and either pour directly into the soup, or garnish each bowl with it.
