Olive Oil Cake recipe that’s moist, fragrant, and beautifully simple — perfect with just a dusting of powdered sugar and some orange zest on top.
🍊 Olive Oil Cake with Powdered Sugar and Orange Zest
Single-layer 9-inch round cake
ingredients :
– 1 ¼ cups (250g) granulated sugar
– Zest of 1 large orange
– ¾ cup (180ml) extra virgin olive oil
– ½ cup (120ml) whole milk (or almond milk for dairy-free)
– 3 large eggs
– 1 ½ cups (190g) all-purpose flour
– ½ tsp baking soda
– ½ tsp baking powder
– ¼ tsp salt
– 2 tbsp fresh orange juice (optional, for enhanced flavor)
Decoration:
– Powdered sugar, for dusting
– Freshly grated orange zest, for garnish
Instructions:
1. Preheat the oven to 350°F (175°C). Lightly grease a 9-inch round cake pan and line the bottom with parchment paper.
2. Infuse the sugar: In a large mixing bowl, combine granulated sugar and orange zest. Rub them together with your fingers until the sugar is fragrant and slightly moist.
3. Add wet ingredients: Whisk in the olive oil, milk, eggs, and orange juice (if using) until smooth and well combined.
4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Mix the batter Gradually add the dry ingredients to the wet ingredients, whisking just until smooth. Do not overmix.
6. Bake: Pour the batter into the prepared cake pan. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
7. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8. Decorate: Once cooled, dust with powdered sugar and sprinkle fresh orange zest on top.
