Ingredients:

– 2 fish (tilapia, snapper, or other types of fish) can be substituted with vegetable protein

– 3 cloves shallots, mashed

– 2 cloves garlic, mashed

– Red chillies to taste, mashed (to taste)

– Lemongrass to taste

– 1 turmeric leaf (if available)

– 2-3 bay leaves

– Salt to taste, mashed

– Ginger to taste, mashed

– Turmeric to taste, mashed

– Cumin to taste, mashed

– 1/2 tsp ground pepper

– 1 tsp lime juice

How to cook:

1. **Fish Preparation**: Clean the fish, gut it, and wash it thoroughly. Marinate the fish with lime juice and salt and let it rest for 10-15 minutes.

2. **Making Seasoning**: Combine shallots, garlic, turmeric, ginger, keminting, peppercorns, salt, bay leaves, turmeric leaves, lemongrass with the fish in a pan. Mix well so that the spices coat all parts of the fish.

3. Then cook over medium heat until the fish is cooked and the water shrinks. Serve with warm rice and chilli sauce to taste.

Tips:

– You can add vegetables such as tomato slices or basil leaves to the marinade to give it a fresher flavour.

– For flavour variation, you can also add a little coconut milk if desired during cooking.
