I cubed the butts before smoking for more surface area. The reason they’re in pans is so I could keep the juice.

    I smoke two butts in the afternoon, it makes me feel alright. I smoke to butts in time of peace and two in time of war…

    I did the same thing today with lamb shanks for carnitas

    Looks good! I guess this would be more of a norteño style of carnitas. I am used to them taking a pig and frying it in oil in central México.
