I did two chuck roast for the first time today. Fought pellet smoker all morning to maintain 250. Once they hit the stall I wrapped them I put them in the oven to finish out. Ones is a little dry but they came out good and the family is stuffed.

Doing the same at 0600.
It’s good stuff
Tie some twine around the outside to keep it from spreading out while it cooks. Will make a world difference in keeping it from drying out.
Starting 6am tomorrow. It’ll be 2nd time using the smoker. Hopefully no issues.
I shred and make carnitas!
