I got up and smoked a ham this morning and it smells incredible.

Once it hit 110, I brushed it with glaze. Once it hit 140, I glazed it again and stuck it in the oven on broil for a few minutes to caramelize the glaze.

Now I’ve got it wrapped in foil in a cooler until it’s time to eat 😋

    Gonna do a chuck steak for birria tacos, some mozzarella and mushroom skirt steak pinwheels for the wife, and 2 chickens and 2 turkey breasts for the kids. Leftovers are gonna be fire this week.

    I got a brisket in still but the pork shoulder and turkey are in the oven wrapped on keep warm for now. Threw the juice from the pork shoulder on my burned ends and kinda liked how that came out. Hopefully the brisket hits temp soon. Was near 190 half hour ago and don’t have much time before I need to leave

    I smoked forty pounds of pork butt for two Easter dinners. My family and my wife’s family like pulled pork. I always offer brisket or salmon or pork and they pick pork.
