I start with meat at room temperature. Insert a thermometer into the center of the roast cook it low, 225° and slow to 132° – 133°. Let it rest at least 15 minutes.

Solid showing for a family meal. If it was dirty Mike and the boys it would be over cooked for our liking. But this is good for the family table. Good work.
