Ok, I know this is not particularly beautiful. But it is unexpectedly delicious. Trader J’s deenz in olive oil, mixed with Greek Yogurt, minimal salt, lots of pepper. Chopped a (large) pile of dill and mixed it in, squoze myself a lemon over top. At the last minute I decided to clean and fillet a couple of the Agostino Recca anchovies, chopped them up and threw them in. (The ones in the tub — I find filleting these suckers SO SATISFYING.) A handful of grape tomatoes, the super sweet ones, got halved and added. And after I took this pic I said, hey why not a pile of parsley too? Finished it up with a couple grinds of pepper.

Et voila, a spring lunch that’s sour and briny, sweet and herbal, and just a tad spicy. Like eating a salad for a pirate avoiding scurvy.

I present: Pirate Salad. ❤️❤️❤️

With thanks to this sub for its ideas and encouragement. Happy Easter!

The visual of this reminds me of the pasta salad I made the other day…
Maybe instead of ham I can use some smoked sardines!
