As a lover of Mediterranean cuisine, I always try to incorporate its vibrant flavours into my home cooking. When planning a fish dish to serve this upcoming Good Friday, I wanted to create something a little different from my usual Easter fare. The result is a beautiful fusion of Mediterranean and Caribbean flavours that I think come together so well in this dish.

The idea for this recipe took me right back to holidays spent in the Mediterranean—there’s something deeply comforting about sun-ripened tomatoes, the taste of briny olives, sweet fennel, and the salty punch of anchovies. To me, these ingredients capture the essence of the sea and offer a nod to the coastlines of both Italy and Greece, all brought to life on my Easter dinner plate.

This dish, I promise is bursting with flavour and, in my opinion, can absolutely be the centrepiece on any dinner table. Ingredients:
Cod (or any firm white fish)
Bulb of fennel, thinly sliced (if you don’t like omit or use leeks or celery)
Anchovy fillets in oil (omit if don’t like and use capers)
Capers
Green seasoning
Fish seasoning (or all-purpose seasoning)
Extra virgin olive oil
Garlic cloves, minced
Shallot (s) or half a red onion, thinly sliced
Fresh tomatoes, chopped (or a good quality tinned chopped tomatoes)
Kalamata olives (pitted. If you don’t like omit)
Zest and juice of 1 lemon
Scotch bonnet pepper or crushed red pepper flakes (optional if not good with heat)
Fresh thyme or dried
Oregano
Salt and black pepper to taste
A good splash of dry white wine if cooking only for adults (I used water)
Fresh parsley & Lemon slice/piece to garnish
