    I’m a HUGE fan of using fish tin oils. It appeals to the budget-cook in me. I paid for that oil, I’m going ti find a way to use it.

    I (almost) always pour off the oil and taste that first – 🌻 and cottonseed oils excepted. Those go straight into the trash.

    If I decide to use the oil separately: I match the use to how much I want to taste the oil or how big the oil’s flavor is:

    β€” An aioli for amazing oil, or a tapenade with olives, onion, tomato and fresh herbs

    β€” a compound butter with oil, butter, parsley, and a little garlic for a good oil,

    β€” a Rice vinegar-based vinaigrette dressing for pretty good oil.

    β€” To sautΓ© with if making a hot tinned fish dish or a condiment for later

    One way to use the tin oil in a dish: Make a tin oil pasta dish with a few fresh tomatoes and some parsley, basil and garlic, or you could make a quick cream or white wine sauce with some garlic, Parmesan, and herbs. Can be a vegetarian, or can add tinned fish or other protein: bacon, pork, fresh seafood – anything!

    Always taste your ingredient first, THEN you can decide how to highlight it πŸ™‚

    Good stuff just goes on the bread with the fish. Extra goes on the bread alone (generally a nice crispy baguette). But I like your style

    If I can ever resist slurping it out of the can like a barbarian, I’ll have to give that pesto/chimichuri a shot.

  12. If I’m eating tuna in oil I’ll just add the oil to whatever I’m making with it and when you stir the dry tuna absorbs most of it. For sardines in oil if I’m not gonna use it I’ll load the tin up with stale bread, or grain, or chicken feed and give it to the chickens to clean out.

    I’ve been using it to fry some garlic and then tossing it in pasta with grated Parmesan and then throwing the sardines in on top. Makes the whole house smell like sardines though

    I put some in my Pan Bagnet sandwiches. Sometimes salad dressing. But usually straight from the tin until my chin is shiny.
