A step by step guide to making a traditional chicken dish flavoured with Zaatar spice mix. This was served on this occasion with a simple green salad and a dill, chilli and yoghurt sauce. A lot simpler to make than perhaps it appears because most of it can be prepared in advance and then you simply cook the chicken when you are ready to serve it up. #chicken #zaatar
For the Za’atar
1 tsp dried oregano
½ tsp dried thyme
½ tbsp sumac
2 tsp sesame seeds
Salt and pepper, to taste

For the Grilled Chicken
8 boneless, skinless chicken thighs
3 tbsp olive oil
3 garlic cloves, minced
Juice of 1 lemon

For the Dill Yogurt Sauce
1 cup natural Greek yogurt
2 garlic cloves, minced
2 tbsp olive oil
Juice of 1 lemon
½ tsp cayenne pepper (or to taste)
Salt, to taste
1 cup chopped fresh dill
