Single cheesecake – Bake in a springform pan in a water-bath @ 300 F for about 2 hours. Pre-heat oven to 475 F, but don’t forget to reduce the temp after placing your cake in the oven!
Individual Mini cakes – Bake in a muffin tray with foil cupcake cups for about 30 minutes. Make a water-bath with a sheet tray large enough for the muffin tin.
For either single or mini-indies: Fully cool overnight before making the ganache and pouring over. Then remove from springform pan or foil cupcake cups.
