Cooked it yesterday and sat in the fridge for dinner tonight. Seared on carbon steel and got a bit more grey than planned because it was still cold from the fridge in the center.

    A full size cow will only yield two steaks. Weighing less than 2 lbs each.
    Most of the time, butchers keep them for themselves. Yum!!!

    I’m usually a 5-7 hour guy, same temp. 

    Is the meat still as tender after only a few hours soak?
