LEMON BLUEBERRY MUFFINS
for the muffins
nonstick spray
2 cups all-purpose flour, plus more for dusting blueberries (about 1/2 Tbsp)
1/2 cup sugar (or substitute)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/8 – 1/4 tsp ground nutmeg
1/4 cup unsalted butter, cold & cut into cubes
1 1/4 cup cold buttermilk (see NOTES)
zest of 1 lemon
1 egg
1 cup fresh blueberries
for the glaze
1 Tbsp fresh lemon juice (juice from 1 – 2 fresh lemon wedges)
1/3 cup confectioner’s sugar (or substitute)
1. Preheat oven to 400°F. Spray muffin pan with nonstick baker’s spray. Set aside.
2. In a large bowl combine 2 cups flour, sugar, baking powder, baking soda, salt and nutmeg. Combine. Cut butter into flour mixture with a pastry blender until mixture resembles coarse meal.
3. In a separate bowl combine buttermilk, lemon zest and egg. Whisk until combined. Slowly add liquids to flour mixture. Stir just until moist. Coat blueberries with 1 Tbsp flour. Gently fold blueberries into batter.
4. Scoop batter into wells of prepared muffin pan. Bake 20 minutes or until muffins spring back when touched. Place muffin pan on wire rack, 5 minutes. With a butter knife, gently remove muffins from pan and place each muffin on rack to cool.
5. To make glaze: Whisk lemon juice and confectioner’s sugar in a bowl until smooth. Drizzle glaze over cooled muffins.
NOTES
1. If you do not have buttermilk on hand, make some. Combine 1 cup milk (or substitute) with 1 Tbsp white vinegar (or lemon juice). Give it a quick stir and allow mixture to rest 15 minutes.

When making the batch for this video, I avoided adding extra sugar and used sugar substitute. If you decide to bake these with sugar substitute, just make sure to use the same amount of substitute that you would use of sugar.
