The food is intentionally kept simple, allowing the wines to shine. The list is extensive, and under the guidance of sommelier Aditya Jadhav, each meal is paired with a thoughtful pour. Our lunch was complemented by a Sula Dindori Reserve Chardonnay, partially fermented and aged in French oak barrels. This medium-bodied wine, with its balanced acidity and subtle oak, pairs beautifully with the creaminess of palak paneer and butter chicken. For connoisseurs and curious drinkers alike, Jadhav offers a tasting session accompanied by a grazing board, guiding guests through aroma, flavour and finish. The cellar currently spotlights the best of Indian wine, but will soon include international labels too. And if you ever tire of wine? Jadhav can rustle up a mean gin or whiskey cocktail on request.
The service
The Holland House
Friendly, efficient and attentive, a team of four takes care of every detail at Holland House. Expect curated playlists to match every mood streamed through an excellent indoor-outdoor sound system, bonfires under the stars, and a lovingly laid out spread at every meal.
Accessibility
The two-storey bungalow features an elevator, and the staff is happy to assist guests with the few steps at the entrance.
Further afield
You may feel tucked away on your own private wine estate in Nashik, but if you ever tire of floating in the heated pool, the tasting rooms and vineyards of Valonné and Sula Vineyards are about 15 and 45 minutes away, respectively.
Anything left to mention
Holland is bubbling with plans: collaborations with top chefs from across India, themed wine pairings—from Bordeaux to Champagne—and grape-stomping in the gardens when the Chenin Blanc and Syrah vines ripen next year, leading up to their in-house label.
