    What temp did you bake this at? It seems like the oven may have been a bit high

  6. Did you turn off oven & prop open door for an hour-ish? This has always helped me avoid cracks

  10. When mine crack, sometimes I’ll do a sour cream topping to hide it.

    That’s a fine looking cheesecake! That big restaurant chain would charge $60-70 for that!

    All that matters is the taste!

    If it cracks, while it’s frozen, you can hover a decorating metal cake spatula over a flame, then press it against the cracks and spread. You will slowly seal the cracks, cosmetically.

    Cracks are entirely overblown in my opinion. Anybody who takes an issue with cracks, can get the fuck out. Taste matters, and this looks tasty as hell.

    I love it when it gets a little goofy and browned. One i make does that and ends up somehow fluffy and dense once it settles.
