WRITTEN RECIPE:
Ingredients –
2 tbsp oil
1 brown onion, chopped
2 cloves garlic, diced
2 leeks, white and light green parts, sliced
2kg washed white potatoes, chopped (skins on)
1L vegetable stock
Cracked black pepper
1 tsp dried herbs
1 cup (250ml) plant milk
Method –
1. Heat oil in a large pot over medium heat, add chopped onion, cook stirring for 2 minutes.
2. Add diced garlic, cook for 2 minutes, then add sliced leek and chopped potatoes.
3. Cover with around 1L of vegetable stock and 1 cup of plant milk, season with pepper and herbs.
4. Place the lid on and bring to the boil, reduce heat and simmer for 15 minutes or until potatoes are soft.
5. Blend into a smooth soup, ladle into bowls, garnish with chives/spring onions and serve with toast. Thanks for watching.

Have you tried with all leeks and no onion or all onions and no leeks?
