Pretty much every time I make pulled pork there will be at least one batch of nachos. My kid loves nachos so will usually be 4 or 5 batches of nachos that get made from.

i make bbq pork nachos/tacos with fresh smoked pork butt more often than i do sandwiches or anything else with pork butt. my friends and family love a good nacho/taco bar. we don’t do whole pan like you. we allow each person to make their own to their liking with all the fixins.

I smoked a few racks of ribs the other day and I make baked nachos with the rib meat, beans, jalapenos, cheese and drizzle BBQ sauce on top. I learned that in Memphis, very tasty

I just recently got all of my teeth pulled (long story) in preparation to get dental implants… I can’t eat nachos or anything that isn’t soft for the next 6-8 weeks. I guess I’m gonna have to mute this sub until I can actually eat, cuz those nachos are just teasing me! 😂

That is usually the fist go to after we get tired of eating sandwiches. Baked potato is also a great use. Pizza is also a good use.

We’ve done nachos, tacos, etc. but chilaquiles is my favorite use, especially if I’ve made my own salsa verde. You basically toss tortilla chips in red or green salsa in a hot pan on the stove until soft (not the chunky jarred kind I’m talking homemade; enchilada sauce will work in a pinch) and then top it with whatever you want. Reheated pork, crumbled queso Blanco, cilantro and onion, crema, some people do a fried egg. It’s a quick and versatile meal for any time of day. Today I actually repurposed some spare ribs that I didn’t like the outcome of. Cut the meat from the bone and into thin strips and made a great lo mein. The smoke ring, color, and flavor was the closest to the Chinese take out pork I’ve ever made myself.

Yellow corn chips, base latter of shredded fiesta cheese, pork, another layer of melted cheese, and bake at 400 for about 12-14 minutes on one of those double layered cookie sheets so the bottom doesn’t burn.
Top as you prefer and devour

Key is to reheat the pork in a pan with some liquid and seasonings and heat/crisp up the nachos separately. Then add the cheese and put it back in the oven to melt the cheese. Then add the pork and toppings. Took me several iterations of “it’s too dry, Dad” to figure that one out…
