Broccoli & Cheddar Pasta

1/4 cup melted butter
1/4 cup AP flour
1/2 white onion diced
2 cups milk
2 cups chicken stock
1 cup chopped broccoli
1 cup matchstick cut carrots
8oz shredded cheddar
Salt & White Pepper
Pasta of choice

-Cook onion in melted butter over medium heat for 5 minutes while stirring until soft and lightly browned
-Add flour and stir in, cook while stirring for 3 minutes
-Slowly add milk while whisking. Whisk until completely smooth.
-Add chicken stock and whisk in, continue to cook
-Add vegetables and cook while simmering until tender
-While vegetables cook, cook pasta
-Add cheese to the sauce and whisk until smooth. Season with salt and pepper.
-Add pasta to sauce, toss together and serve.
-Enjoy!
