I'm trying to eat more leafy greens. What are your favorite ways to eat them? These are the the recipes I've been enjoying lately:
- Herbed Quinoa & Chickpea Salad with Lemon-Tahini Dressing
- Berry smoothie with a handful of spinach (half cup each of yogurt, milk, and mixed berries, squeeze of lime juice, spoonful of sugar, handful of spinach)
- Spinach spaetzle
- Pasta With Spinach, Feta and Yogurt Recipe
- Skillet ravioli with spinach
- Kale and coconut fried rice
- Red Curry Lentils With Sweet Potatoes and Spinach Recipe
- Kalesadillas
- Haluski
- Atakilt wat (Ethiopian cabbage and carrots)

- Sweet and sour red cabbage

Toss a container of fresh spinach with a couple Tbsp of olive oil or avocado oil (or whatever neutral cooking oil you prefer.
Spread out on a cookie sheet or rimmed baking sheet.
Top with thinly sliced tomatoes or quartered grape tomatoes.
Season with salt, white pepper, and garlic powder.
Optional for lacto/ovo vegetarians: top with about 4 oz crumbled feta and 1/4 cup grated Parmesan.
Pop under the broiler for about 7-9 minutes, rotating the pan once.
If you topped with cheese, the edges of the feta should be starting to brown.
If no cheese, the tomatoes are warmed through and the spinach is starting to wilt.
Serve warm.
Comforting, delicious, and super easy.
