Last night at 8pm I tried a Sou Vide Steak for 3 hours and fell asleep forgettinf to set a timer on it.
I woke up this morning slightly upset that the water temp dropped to 95F and I wonder if it is still safe to eat.
I put crushed garlic in the bag too. Please tell me it is still safe to eat.

    You have about 4 hours in the “danger zone” before things become unsafe. Especially with the concerns of botulism from the garlic, it’s better to lose a few bucks here, sorry.

    The consequences of foodborne illnesses aren’t worth it – do yourself a favor and spare all your holes. All of them.

    If the water temp is 95F (35C), it’s had plenty of time in the danger zone. Absolutely do not eat.

    Well….It is basically pasteurized since it was sous vide and you haven’t broke the seal. In that respect its definitely “safer” than if you left out open cooked steak or uncooked steak.

    That being said, I doubt I would eat it. You can be pretty liberal with leaving unopened sous vide cooked stuff in the fridge for a week or three. But this has very slowly progressed through the most dangerous parts of the danger zone.

    Oh man, I already gave her half of it this morning. I rinsed ofd the garlic but it still smelled of garlic.
    I hope my dog doesn’t get sick now. I will keep you all posted tomorrow if she remains in good health. Gheeze, I am worried about her now.
    I thought dogs could handle raw meat and that kind of bacteria.
    I wish i would had thrown it out now.
