RECIPE BELOW – 🍅🧅🧄🍞🧀 Roasted Tomato Soup and Grilled Cheese
Part 9/10 of my Comfort Food Series
This soup is so full of flavor and so simple because you can use whatever you have on hand; add bell peppers, use basil instead of rosemary and thyme, whatever you want!
Ingredients
Roasted Tomato Soup
– 1 lb tomatoes, halved or quartered (I used Campari tomatoes but Roma, cherry and heirloom tomatoes are all great)
– 1 large onion, quartered (yellow, white, red or even shallots all work)
– 1 head garlic, top sliced
– 1 sprig rosemary (or ½ tsp dried)
– 2 sprigs thyme (or ½ tsp dried)
– 2 tbsp olive oil
– ¾ tsp freshly cracked black pepper
– ¾ tsp salt, or more to taste
– 1 tbsp unsalted butter
– ½ tsp each dried basil, oregano and parsley
– 2 cups chicken stock (or vegetable stock)
– ¼ cup heavy cream, optional
Garlic Butter Grilled Cheese
– 2 slices white or sourdough bread of choice
– White cheddar, sliced to fit the bread
– Roasted garlic cheddar, sliced to fit the bread (or any 2 cheeses of choice)
– 3 tbsp unsalted butter
– ½ tsp each garlic powder and dried parsley
– Pinch of salt
Instructions
For the Roasted Tomato Soup: preheat oven to 400℉ and line a large baking sheet with parchment paper or foil
Add the tomatoes, onions and herbs, then add olive oil and ¼ tsp each salt and pepper
Toss to coat veggies in the olive oil, then place the garlic cut side down on the baking sheet
Roast for 25-30 mins or until softened and lightly charred
In a large pot, melt the butter then toast the remaining ½ tsp of pepper and dried herbs for 1 min
Add the veggies (remove the herb sprigs and roasted garlic, then add the cloves)
Pour in the chicken broth
Blend until smooth using an immersion or stand blender
Season with the remaining ½ tsp of salt, or add more to taste
Optionally stir in cream
Bring to a simmer until warmed through (you can also strain the soup, but I don’t bother)
For the Grilled Cheese: in a bowl, mix together the butter, garlic powder, parsley and salt
Butter one side of each bread slice with the garlic butter
Heat a large skillet over medium-low heat
Layer the cheeses, then cook until the outside is golden and crispy and the cheese is melted
