An absolutely delicious and flavourful recipe for the Spring period.Give it a try and you will love it.

You will need:

1.120 g whole milk
200 g granulated sugar
90 g semolina, fine
30 g corn starch
3 eggs, medium
1 teaspoon vanilla extract
lemon zest of 1 lemon
1 pinch salt
90 g butter

For the coating
2 tablespoons water
1 egg, medium
2 tablespoons granulated sugar

To serve
2 tablespoons granulated sugar
1 tablespoon honey
1 tablespoon cinnamon

Start by preheating your oven to 180ºC with the fan on.
In a saucepan, combine the milk and sugar, then heat over medium until it reaches a boil.
In a mixing bowl, combine the semolina and cornstarch.
Then, add the eggs, vanilla extract, lemon zest, and salt, whisking everything together thoroughly. Gradually pour the hot milk into the egg mixture using a ladle, stirring continuously.
Return this mixture to the saucepan, place it back on the heat, and stir constantly until the cream thickens.
Once thickened, take it off the heat, add the butter, and stir until it melts completely.
Grease a 27 cm baking dish with butter and dust it with semolina.
Pour the mixture into the dish and spread it evenly with a spatula.
For the topping, mix water, egg, and sugar in a bowl.
Use a pastry brush to coat the entire surface of the milk pie, then bake for 40-45 minutes.
After baking, let it cool for at least 4 hours before serving.
Enjoy it with sugar, honey, cinnamon, or on its own.
