
Cooking a butt for a family lunch tomorrow. Wife thinks I’m crazy for trusting a grill I bought 2 days ago on FB using a method I’ve never tried, but that’s nothing new. I have a new propane smoker (bought on clearance) that she expected me to use but the charcoal kettle seemed much more interesting of a challenge. I hope I get this right.

I have no problem doing overnight on my kettles. Only time I ever had any issues was a windy night that brought my temps up a little(+20). I never slept well when I used pellet grills for long cooks.
Add more charcoal to snake. Easier to choke vents and kill the fire, than it is to add on to snake.
Keep temps between 250-300. Once it’s at 165/170 wrap in foil and put in oven. Leave probe in it and go to bed. Set it to go off when it hits 200. Start checking for probe tenderness. Once it’s done let it sit unwrapped for like 10-15 mins so it stops cooking, wrap back in foil, wrap in towels and put in cooler till lunch time
