Kimchi and gochujang makes this an easy one pot meal that doesn’t compromise on flavour. Ideal for a weeknight dinner, and scales up well for meal prep.
* 300g Shabu Shabu Beef * 220g Tofu * 300g Kimchi * Half of a medium onion * 1 tbsp Gochujang * Sugar and sesame oil to taste * Spring onions for garnish
**Instructions**
1. Cut onions and kimchi. 2. Stir fry onions until slightly wilted. Add kimchi and stir fry until aromatic. 3. Add water and gochujang, along with the beef. Bring to a simmer, stirring to separate the beef. 4. Once at a simmer, add tofu and cover. Simmer for 10-15 minutes. 5. Drizzle with sesame oil once the heat is off, and serve. Garnish with spring onions. 6. Serve hot, with rice.
