
I put a pretty big chuck roast in last night and today there is quite a bit of liquid. Could this really all come out of the meat or is there maybe a leak or something? I too it out and moved it around and didn't see any leaking out at all. If it happens to be some water would it ruin my meat? I have like 8 hours left until I was planning on using it.

Nah, that’s about right. Meat releases a LOT of juices.
If the tank water is clear and the bag looks like that, no visible leaks, then it didn’t leak. Amount in the bag looks pretty normal.
If you used a good amount of salt in your rub it’ll draw out a lot of moisture. When I rock salt my pork belly before smoking the pan I use has quite a bit of liquid in the bottom when I take the pieces out.
The higher the temperature, the higher the moisture loss.
Depending on temp, likely a combo of “meat juice” and rendered fat.

Meats release a lot of fluids and there’s no evaporative loss.
Unless you’re seeing significant traces of meat juices in the SV water, you’re good. That’s a fantastic base for butter/flour roux gravy – or to add to soup stock, if you’re one of those godless perverts who don’t appreciate *real* gravy.

Too much slop in the bag
Anyone know which bags are OK to use in the UK? We have ziploc bags but they don’t say it’s for sous vide. Is there anything I should look out for to try sous vide using bags?
Or is it too small of a bag for that much liquid?
I mean… There’s room for more!
