I’ve been making vegetarian sandwiches for years, so I’m not sure why in my nearly 20 years of vegetarianism have I not thought to make a club sandwich!
This sandwich has 550 calories and 62 grams of protein, so excellent macros for a 1,200 diet! I used three slices of Arnold Keto bread (tried it for the first time today – tastes just like regular white bread), some Hellman’s light mayo seasoned with Penzey’s “sandwich sprinkle,” lettuce, two slices of lite Jarslberg cheese from Trader Joe’s, eight slices of hickory smoked Tofurky, and four slices of Mrs. Goldfarb’s “Unreal Bacon.” And of course, the sandwich was accompanied by a Grillo’s half-sour pickle.
Wow, this brought back memories! I was not expecting to be so impressed with this sandwich, but it really does have the perfect balance of ingredients. Next time I’ll add some tomatoes and a bit more mayo and I think I’ll have achieved perfection. Not to mention it was incredibly filling – I’m *stuffed!*
