It’s the perfect lunch and I love it with some pita chips!
This is great to make ahead of time too and store it in the fridge for lunch the next day.
3 cups chicken
1 1/2 cups, cucumber, peeled and diced
1/2 cup red onion diced
1/2 cup feta cheese
Optional add ins: Kalamata olives, and grape tomatoes
Dressing
1 cup plain, Greek yogurt
1 tablespoon Dijon mustard
1/2 lemon juiced (if you have it)
2 tablespoon fresh dill chopped
Spices to taste (I add dried parsley, salt, pepper)
1. Place chicken in a bowl and chop and add veggies. Add in the rest of the ingredients and mix well. (It also works better to mix the dressing ingredients separately, but I usually want fast and less mess so this works too.)
2. Serve with pita chips or tortilla chips and enjoy.
