Smoked my first 10lbs bone in pork butt today. Thanks to the sub for lots of pervious help. Took about 11 hours at 275. Final temp was 206/207. I was shooting for 203 but my leave in thermometer wasn’t well placed. Did a dry brine with How To BBQ Right BBQ Rub and applewood pellets. Really happy with this. Next time I think I will try 250 and I will make sure I have foil before I take it off the smoker.
