I smoked my first pork butt yesterday and it had a very good flavor and was juicy but the problem I had was it did not want to shred very well. It came apart more in chunks. Since it was my first time I opted for a small 2.5lb boneless cut and smoked it at 250 until it hit 150 internal pulled and wrapped with foil and pulled at 198 internal . I placed back in the smoker unwrapped for 30 minutes at 275 to firm up the bark. I then let it rest for 30 minutes before trying to shred. Any suggestions? Could it be the cut of meat or would I have to been better doing a larger butt? Thanks

    What was the finish temp and total cook time? I usually pull mine around 205 ish and let it rest as long as possible. 2.5 lb prob over cooked it, it can be overcooked if it doesn’t shred easily. Again depends on finish temp and the amount of time it sat there on the smoker at the temp.

    I had some trouble with my probe pulled it for the last time so I’m not sure what the final internal temp was
