What I Would Eat ep2: The Versatile Vegan 🌿

This one was so much fun to do and a great little challenge.

Some notes for breakfast: I love doing three different options that can be had separately or combining two (ex smoothie + oatmeal) depending on the day and hunger levels.

Theme Ingredients (using these across multiple recipes)
– resident veggies
– quinoa/rice
– chickpeas
– hummus & vegan tzatziki
– whole wheat noodles
