This week's goal was using up whatever was in the pantry and freezer. Had a large pack of chicken breast, some frozen veg, half a carton of egg whites that needed to be used, and a few whole eggs left. I always have rice and spice and oils.

So chicken fried rice!

I actually over calculated my recipe, ended up with 14 portions instead of 12, so I had an extra day of fried rice prepared (I eat one serving for 5 days, my partner does 1.4 servings for 5 days)

Guess that was the universe preparing me for the disaster later… (See the last photo)

Ingredients:

  • boneless skinless chicken breast
  • jasmine rice
  • reduced sodium chicken broth
  • frozen mixed vegetables
  • butter
  • oil
  • whole eggs
  • egg whites
  • reduced sodium soy sauce
  • sesame oil
  • salt, pepper, garlic powder, white pepper, ginger, onion powder
