This is so easy and delicious. I use a Dutch oven but a cast iron pan works great too. Basically you just toast the rice in oil, add onion and garlic, cook a bit more, add some seasoning (cumin, Goya Sazon, tomato bouillon) and then simmer in a bit of tomato sauce and chicken stock. Comes out perfect.
