Char It in the Gozney and Finish on the Pizza Steel.
It’s the best of both worlds. Neapolitan char and look but New York crunch! Not sure why I never thought of it.

Can you just kill the flame in the gozney/ let it sit on the stone and not have to utilize two cooking ovens?

Most of what you’re calling “Neapolitan char” is actually caramelized sauce on the cornicione.

You do you but seems like a lot of extra work. I would just kill the flame before launch and let it hang out for a few minutes to cook the bottom up nice before turning flame on.
