Qamar al-deem drink

Qamar Al-deen is a Middle Eastern drink that is dried apricot based. It is believed to be originated from Syria where a lot of apricot varieties grow. It is very popular during the holy month of Ramadan. I couldn’t get any apricot leather , so I used soaked dry apricots to make this drink and the result is fantastic. It is thick, sweet and delicious.
Ingredients
* 1/2 cup dry apricots
* 1/3 cup sugar
* 1/2 tsp rosewater or orange blossom (optional)
* 1/2 cup ice
* 3 cups cold water
Method:
* In a bowl add the dry apricots and warm water and soak them overnight
* Into a blender add the soaked apricots the water it soaked in, rosewater or orange blossom ( if using) , and one more cup of water and pulse. Add sugar and pulse again.
* Add the rest of the water and ice
* Chill in the refrigerator till serving time.
