How do I process these? I have a pressure canner, so I'll be making pickled onions, but I don't have enough jars for this many onions. Maybe carmelize them? I've only carmelized yellow onions, so I'm not sure how that would taste.

    Red onions carmelize just as well. They’re my favorite pizza topping when you slice them wafer thin

  4. Make some bacon jam to hand out if you have too many onions to use.
