My other half and I both work, and whilst our jobs aren't physically exhausting, they are pretty mentally tiring, which can lead to making dinner in the evening a daunting task. Due to this, I've taken to trying to prep as much during the weekend as possible, to limit the amount of effort required during the week.
As I'm getting multiple things ready at once, I also find that I cook onions better that normal, as I'm able to give them the time they need to cook while I'm doing other things, rather than getting impatient with them! I also find that many things taste better later in the week having sat in the fridge too.
I did breaded cod, with chunky chips and peas yesterday, so I've now spent the last few hours getting everything ready for the next 6 days, with some things now cooking away in the slow cooker and oven. I am 'cheating' on a couple of things with packet sauces, but everything else is fresh.
On the menu for this week we have:
Keralan chicken curry
Beef stew
Chicken wraps with pepper and onions
Chicken Korma
Duck pancakes, with cucumber & hoisin
Stir fried duck, with chilli, carrot ribbons, noodles, orange sauce
'Greek' lemon chicken
