it’s been a personal mission of mine to eat more tofu after 10 years of being vegan lol. i’ve never been able to cook it at home in a way I really enjoy, but I discovered the boiling tofu in saltwater method and my life has been changed. I boil it in saltwater, drain it, and then let it sit on paper towel or with room to let more water out. then, in this case, I cubed it, seasoned with corn starch, garlic salt, and black pepper, sprayed it with oil, and air fried it. the salad consists of iceberg lettuce, pickled veggies (cucumber, bell pepper, and banana peppers), roasted sweet potatoes and onions, the air fried tofu, and a creamy bbq dressing made with kite hill sour cream, vegan mayo, bbq sauce, and red wine vinegar.
