

I understand that there will be added cost for meat coming from a place where the meat is small farm raised and processed. I live in Florida for context. Also any suggestions for other places/surveyors and or tips for things to look for or whatever would be appreciated.

For the 56 lb 1/8, basic cow math says that from live to hanging is 50% loss. From hanging to freezer is another 40% loss.
So that puts this cow at about 1500 lbs live. That’s good. About where it should be.
Price for freezer beef varies, but most are about $5/lb hanging weight on the low end and 8 on the high. This 56 lb 1/8 would be about 94 lbs hanging.
Now I can’t remember how much the 1/8 cost was so I’m going to post and edit in a second after looking.
Edit. $425 for the 1/8 @ 94 lbs gets you to $4.50/lb hanging. That is, if it’s quality beef, an excellent price as long as you are getting a true 1/8 share and not the 1/8 nobody wants because it’s all round steak. If the cuts are to your liking, it’s very fair for quality direct to consumer beef.
Edit 2- I looked at the cuts because it seemed cheap. This is basically a freezer clean out price. No premium steaks, heavy on less desirable cuts. Still not bad.
I sell quarters for $4.50 hanging in NC. Should be $5, but pre-sold and sticking to the price.
If you compare the prices between the 2 you’re basically paying their per pound price for everything but a couple cuts of the 1/8th. The ground beef price isn’t great and that’s mostly what you’re getting. It doesn’t seem like you’re getting much of a bulk break. That being said if it’s good meat I would pay their per lb price for a lot of the list.

56lbs @ $425 works out to $7.59/lb, and none of those cuts are worth it imho. They’re even selling everything individually for $7.55, so there’s absolutely zero reason to; no bulk discount or anything.
If you like the meat, just mix and match and buy it individually.
I mean, it’s probably cheaper than your local grocery store by a few pennies. But it’s not a screaming deal hy any stretch. You’re likely to find someone else selling quarters, or even eighths, and actually include some steaks for that price or even better…
The short ribs are the only decently priced cut I see in comparison to what’s around my area. Everything else is more expensive
Find a couple friends and buy a half cow
Florida, so it’s grass fed and will look even worse than the photo. I buy for quality not quality. If you need a lot of meat that’s upgraded and grassfed, there’s nothing wrong with that.
Man, I shop deals and I regularly get New York’s and t-bones for $6 to seven a pound
