    People are going to shit on this crust – but everyone likes their steak differently. Personally I would fuck this steak up and enjoy every bite (although I like my centers medium rare-rare)

    (Sorry I had to say it. To each their own, but I can’t see how that char + that thickness could be anything but well done inside, so therefore not for me.)

    I worked at a steakhouse when I was young, and had a specific customer who ordered a T-Bone “Pittsburgh Style” every Sunday. Basically, he wanted the steak completely burnt outside, but rare inside. He’d send it back if it wasn’t burnt or rare enough.

    What I eventually did was just dump oil on one corner of the grill, until I had a huge fire, white hot grill and blue flames. Then I’d dip the steak in oil and throw it into the flame for 30 seconds.

    I tried one once. It was kinda gross.

    I for one thinks it looks great that char/crunch is very important in its own way almost as much as what’s going on inside.

    Absolutely! That’s is when I enjoy the steak the most! Not everyone likes it like this but I freaking love it. However, the inside needs to be a good medium. If it’s well done on the inside then absolutely not.
