Going to try a reverse sear, we both like medium rare so any recommendations on what temp to pull them at and start searing them would be appreciated

  5. First off, congrats on your sobriety! I’m proud of you internet stranger!

    I reverse sear steaks whenever I cook them. My method is dry brining them after patting them dry add your favorite seasonings after oiling them with a high smoke oil (I usually use avocado or sunflower oil) (I usually go with salt, msg some celery salt and cracked black pepper as far as seasonings go). Put in fridge on a wire rack for at least 2 hours (you can skip this if you are in a pinch). Preheat my oven to 200 let them “bake” in there for around 45 min (I check the temp with a thermometer every 20-25 min or so). Then once the steaks reach around 100-105 F internal I take em out heat up my cast iron pan with some avocado oil and ones the oil starts shimmering I put the steak in sear 45 seconds or so on each side. Once that’s done I flip it over back to the first side and add in butter and garlic and herbs and baste for 45 seconds on each side and a quick 10 second sear on the sides and let it rest for 5-7 min. Comes out med rare every time for me. YMMV as I tend to go for thicker cut steaks (like what you seem to have here) and everyone’s stove and ovens are a bit different that’s why a meat thermo is a must imho.
