✨ Soft & Fluffy Turkish Açma (Breakfast Buns) ✨
These soft and buttery Turkish buns are perfect for breakfast or tea time! 🥐☕ Here’s what I used and how I made them:
📝 Ingredients:
1 cup water
1 cup milk
1/3 cup oil
1 egg + 1 egg white (save yolk for brushing)
1/4 cup sugar
5 cups flour
1.5 tbsp instant yeast
1/2 tsp salt
Butter (for layering)
Black sesame seeds (optional)
👩🍳 Step-by-step:
Mix all the ingredients and knead the dough until smooth and elastic.
Without letting it rise, divide into 100g balls and place a small piece of butter on top of each one.
Cover and let them rise until doubled in size.
Take each ball, press gently to flatten, and work the butter into the dough while stretching it out.
Fold and roll the dough, then stretch it again into a rope shape.
Twist and shape into a ring (as shown in the video), then place on a tray. 🌀
Brush with egg yolk and sprinkle with sesame seeds if desired.
Bake in a preheated 400°F (200°C) oven until golden brown. 😍
They’re unbelievably soft and fluffy — the butter between layers creates a perfect texture!

Hello everyone. Welcome back to my YouTube channel. I hope you’re all doing great. Today we’re going to make a classic Turkish soft buns. For the dough, add 1 cup of water, 1 cup of milk, one barn, three cup of oil, and one whole egg into the bowl of your stand mixer. You’ll also need a second egg, but just the white goes into the dough. Set the yolk aside. We’ll use it later for brushing on top before baking. Next, add 1/4 cup of sugar. Then 5 cups of flour. On top of the flour, sprinkle 1 and 1/2 tbsp of instant yeast and/ teasp of salt. Now place the bowl onto your stand mixer and let it knead the dough until it’s smooth. Once the dough is kneaded, I don’t wait for it to rise just yet. I transfer it straight onto my work surface and divide it into small pieces. I make dough balls weighing about 100 g each. Then place them on a flowered tray to rest. Before letting them rest, I place a small piece of butter on top of each dough ball. Then I cover them with plastic wrap and let them rise until they become soft and puffy. Now the dough has almost doubled in size and the butter on top has come to room temperature. I take one dough ball onto my work surface and gently work the softened butter into the dough as I stretch and flatten it. Once it’s flattened, I fold both sides in from the edges, then roll it up tightly from the unfolded side. I set it aside and repeat the same process for the remaining dough balls. Now that my dough balls are ready, you can either cover them with plastic wrap and refrigerate them for a while, or you can make them the night before, shape them in the morning, and bake. But for now, I’m going to move on to shaping them so I can show you the next steps. I take one piece of dough and slowly stretch it out. Then I twist both ends in opposite directions. I bring the two ends together as shown in the video and set it aside. I arrange the shaped dough on my baking tray and brush the reserved egg yolk over the tops of each one, giving them a nice golden color as they bake. Before baking, I sprinkle black sesame seeds on top of the dough. Then I place them in a preheated 400F oven and bake until they turn golden brown and have a beautiful crispy finish. Here are my Turkish soft buns fresh out of the oven. I can’t even describe the smell. It’s amazing. Don’t they look just perfect? They’re so soft.
