Thanks everyone for the budget smoking recipes. Tonight I did chicken thighs with the 0-400 method. Juiciest chicken I’ve ever made. Did some garlic parm broccoli and four cheese potato’s on the side.

Not glamorous but still satisfied the palate

    Of all the meats I’ve smoked, the one I enjoy eating the most, the hardest to mess up and the one I get the most compliments on is my chicken thighs. It’s not the 20 hour brisket that cost $80, or the ribs I obsess over. It’s the cluckin $1.29/lb chicken thighs 🤷

    chicken thighs? love `em! They dont overcook easily. I havent smoked very many but that sounds like a fantastic idea.

    Looks good. I’ve been doing mine on the vortex with a chunk of pecan wood. Fast cook and they turn out great.

  5. I did 0-400 wings one day last week and 0-400 thighs on another. I’m sold on that process. No more chewy flabby skin and the meat is super juicy. Well done sir!

    Marinade in pickle juice and hot sauce for several hours or over night. Then season with some cayenne and jerk. Brush a little honey, brown sugar and hot sauce on with about 15 minutes left of the cook.

    Thighs are delicious and forgiving, if you want some crispier skin you can also use the broiler setting in the oven. 2-3 minutes on high should give you that. I have also seen people use straight up propane torches on full blast and had great results
