Missing a few ingredients but I managed to make something pretty damn tasty from what I had in.

Ingredients are:

Butter

Olive Oil

1 large potato cubed

2 medium eggs

1 clove garlic

A big dollop of tomato purée

Cayenne Pepper

Dried Parsley

Salt

Pepper

I cubed up the spud and cooked it on a medium to high heat in the butter, garlic and salt (about 10 mins). Then I added the purée, Cayenne Pepper, Pepper and some of the parsley. Once these were nicely coated, I put a bit more oil in and cracked the eggs in the middle. I put a lid on the pan so the eggs cooked nicely through. Finished with a bit more black pepper and parsley.

One improvement would be to put the egg in a bit earlier as the potato caught a bit underneath on some of them. Although I'm not too fussed about that. Large eggs would probably be better for more of a yolk run, too.

Overall, quite happy and very satisfied this morning.
