Without tasting it personally, I would say that it should be fine, though it is a different cultivar(tsuyahime) than koshihikari so it may have subtly different flavors and characteristics than the most common Japanese variety.
Also it’s probably worth noting that a lot of Japanese restaurants outside of Japan use different cultivars with Calrose being the most popular in the US. In most cases the difference isn’t really worth mentioning but if something seems slightly off this could potentially be the culprit.

Yeah, if you like it then it’s fine for other dishes. It’s pretty a versatile cultivar.
